I can bake.  I can follow a recipe.  I cannot make a decent biscuit&#8230;a &#8220;from scratch&#8221; biscuit.  I think I have in the past but for some reason, since being in the south, my biscuits are lousy.<\/p>\n<p>The first batch which was a &#8220;Sour cream cornmeal biscuit&#8221; &#8211; I liked those!&#8230;but the cornmeal was gritty and a decided &#8220;Not again!&#8221; from Bill.<\/p>\n<p>So &#8211; to the internet and a &#8220;southern buttermilk biscuit recipe&#8221; &#8211; Hockey Pucks!!<\/p>\n<p>Back to the internet and a discussion on flour.  I learned that &#8220;self-rising&#8221; flour includes baking powder and salt as opposed to all-purpose flour which does not.  I never paid that much attention to which kind of flour I bought.  Additionally, a big deal was made of &#8220;soft southern wheat flours&#8221; for biscuits&#8230;specifically a brand called &#8220;White Lily&#8221;.<\/p>\n<p>Ha!<\/p>\n<p>Armed with this knowledge and a bag of White Lily&#8217;s self-rising &#8220;soft southern wheat&#8221; AND the recipe from the back of the flour package &#8211; another batch to the oven.<\/p>\n<p><img decoding=\"async\" class=\"center\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Mar08\/BiscuitsWLIngredients350510.jpg\" hspace=\"5\" alt=\"White Lily flour\" height=\"510\" style=\"width: 350px; height: 510px\" title=\"White Lily flour\" class=\"center\" \/><\/p>\n<p>How could these fail???<\/p>\n<p><img decoding=\"async\" class=\"center\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Mar08\/BiscuitsWLFinal.jpg\" hspace=\"5\" alt=\"White Lily flour\" height=\"324\" style=\"width: 500px; height: 324px\" title=\"White Lily flour\" class=\"center\" \/><\/p>\n<p>Flat&#8230;and not &#8220;light&#8221;&#8230;  And one batch, I turned off the oven, but thought the biscuits needed just a bit more time &#8211; forgot them &#8211; they were burned hockey pucks!<\/p>\n<p><img decoding=\"async\" class=\"center-noborder\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Mar08\/BiscuitsMarthaFlour400333.jpg\" hspace=\"5\" alt=\"Martha flour\" height=\"333\" style=\"width: 400px; height: 333px\" title=\"Martha Flour\" class=\"center\" \/><\/p>\n<p>Martha White Flour &#8211; another self-rising, soft southern wheat flour&#8230;another recipe off the back of the flour bag<\/p>\n<p><img decoding=\"async\" class=\"center\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Mar08\/BiscuitsOvenOn250122.jpg\" hspace=\"5\" alt=\"Martha White flour\" height=\"122\" style=\"width: 250px; height: 122px\" title=\"Martha White Flour\" class=\"center\" \/><\/p>\n<p>Another batch of flat biscuits&#8230;  HELP!!!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I am a good cook.
