I eased into things with two Farmer&#8217;s Markets before my CSA started.  <\/p>\n<p>So, all went very well with Week 1 CSA box.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6676.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6676.jpg\" alt=\"\" \/><\/a><\/p>\n<p>The arugula looked like it needed to be used quick-like so after a salad on Day 1, I processed the remainder into a pesto which I froze for later use.  <\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6681.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6681.jpg\" alt=\"\" \/><\/a><\/p>\n<p>A scramble of spinach and some leftover taco mix made for a nice nest for a poached egg!<\/p>\n<p>There were several green smoothies using the kale and\/or spinach with lemon and frozen berries and kefir.<\/p>\n<p>Bok Choy.  <\/p>\n<p>I roasted Bok Choy (and radish!) several times, dressed with a lemon-Dijon-tahini dressing from <a title=\"Dishing Up the Dirt\" href=\" http:\/\/www.waucomabookstore.com\/andrea-bemis-signed-books \" target=\" Dishing Up the Dirt \"><font color=\"#424ff1\"> Dishing Up the Dirt <\/font><\/a> and then chopped all, combined with some chopped spinach and had a gorgeous and delicious warm salad.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6705.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6705.jpg\" alt=\"\" \/><\/a><\/p>\n<p>That little cast iron dish went in the oven during preheat.  Add the Bok Choy and radish with a drizzle of olive oil to the hot pan and then into the hot oven for a quick char.<\/p>\n<p>Then chop and add to chopped spinach&#8230;<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6709.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6709.jpg\" alt=\"\" \/><\/a><\/p>\n<p>&#8230; some sliced apple and a bit of shredded chicken made for a great supper!<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6737.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/May17\/Week1CSA6737.jpg\" alt=\"\" \/><\/a><\/p>\n<p>This morning as pickup for week 2 loomed &#8230; I made a spinach\/kale\/ham\/cheese hand pie for breakfast.<\/p>\n<p>A wee bit of kale and 2 radish made it into <a title=\"Mel\u2019s Italian Pasta Salad\" href=\"https:\/\/www.melskitchencafe.com\/best-italian-pasta-salad\/\" target=\" Mel\u2019s Italian Pasta Salad \"><font color=\"#424ff1\"> Mel\u2019s Italian Pasta Salad <\/font><\/a> for lunch.<\/p>\n<p>Early this evening I picked up my week 2 box:<\/p>\n<p>https:\/\/instagram.com\/p\/BUat28nlTSs\/<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I eat omnivore, but in the last several years I eat less meat and meat has become more of a side dish with vegetables and legumes getting top billing &#8230; with a few exceptions like CHEESEBURGERS!
