I&#8217;d been thinking I&#8217;d like to have some sandwich bread &#8230; soft bread as opposed to my crispy-crusted artisanal bread &#8230; and today:  <a title=\"Mel\u2019s Kitchen Caf\u00e9: Whole Wheat Quinoa Bread \" href=\"http:\/\/www.melskitchencafe.com\/whole-wheat-quinoa-bread\/\" target=\" Mel\u2019s Kitchen Caf\u00e9: Whole Wheat Quinoa Bread\"><font color=\"#424ff1\"> Mel\u2019s Kitchen Caf\u00e9: Whole Wheat Quinoa Bread <\/font><\/a> <\/p>\n<p>A quick post of the photos (I made 1\/3 recipe, i.e. 1 loaf pan):<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5289.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5289.jpg\" alt=\"\" \/><\/a><\/p>\n<p>First rise &#8211; I got in the middle of a work meeting and it went 2 3\/4 hours &#8230; a bit of an overrise.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5291.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5291.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Shaped to go in the pan.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5301.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5301.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Second rise &#8211; ready to go in the oven.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5304.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5304.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Out of the oven (325 for 30 minutes convection).  ***Next round I might let the second rise go a bit longer and bake 5 more minutes.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5307.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5307.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Ready to cut.<\/p>\n<p><a href=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5310.jpg\" target=\"Large\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/beardogco.com\/WPBlog\/blogimages\/Oct16\/Bread5310.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Yea &#8211; perfect texture, soft but hearty, made a good sandwich and good toast.<\/p>\n<p>***Update 10\/21.  I made a sandwich yesterday (day old) and the bread was soft, but held together for the sandwich.  I sliced and froze the remaining half loaf and today thawed two slices &#8211; again perfectly soft but stayed whole for a sandwich.
